How’s the weather where you are? Here in the South of England, it’s glorious sunshine – it makes it hard to believe that it’s still only February! It did make running the Brighton Marathon on Sunday rather more enjoyable than I was expecting – so much more fun running in the beautiful sunshine (most of our training runs were done in the cold and dark – often featuring rain and mud!).

February on Easy Peasy Foodie has been all about comfort food! I started the month sharing one of my favourite midweek meals: Easy Sheet Pan Chicken Fajitas.

This is a recipe I make nearly every week, but for some reason had never quite made it to the blog! It’s such a great recipe as it features all the great flavours of chicken fajitas, but it’s easier to make AND tastes EVEN BETTER than it’s frying pan cousin – WIN-WIN!

I also shared a new leftover roast beef recipe: my Leftover Roast Beef Korma AND a roundup post of all my Easy Leftover Roast Beef Recipes – 10 great ways to use up you Sunday roast leftovers!

Creating this post reminded me that I’d been meaning to update my old Easy Peasy Roast Beef recipe. This was one of the first recipes I ever created for Easy Peasy Foodie and it was badly in need of new photos and a complete rewrite (just the post though – as with all my old posts, the recipe itself was great – it was just EVERYTHING ELSE that needed redoing!). I’m super chuffed with the result though – especially the new photos!

I’ve also been busy over on Productive Blogging. I kicked the month off comparing two of the most popular email services for bloggers – ConvertKit vs MailChimp. I use both of these services, but I have one I much prefer – I didn’t know how much until I wrote this post! Still on the theme of email, I also wrote about why you should be regularly cleaning your email list (and how to do it!).

One of my aims for Productive Blogging is not just to write my own posts, but also to share posts written by other bloggers and I was delighted that in February I was able to feature two fab guest posts: the first was by Jenna Farmer of The Bloglancer sharing her 10 top tips for pitching to brands and the second was by Lucy Down of Fresh Leaf Creative all about why bloggers should care about personal branding.

4 Unusual Savoury Recipes

And so we turn to this week’s roundup… I must say I had a job deciding on the theme for this week’s roundup – there were so many delicious recipes, but seemingly no common thread… until I spotted that many of the savoury recipes were unusual versions of well-known dishes!

And so, this week’s roundup features interesting twists on macaroni cheese, stuffed peppers, beetroot soup and pancakes!

Savoury Pancakes with Salmon and Broccoli

Since it’s very nearly pancake day, I’m kicking off with this fab twist on pancakes from Jacqui at Recipes Made Easy. Whilst most pancake recipes are sweet, Jacqui’s Savoury Pancakes with Salmon and Broccoli are most definitely not! I love how she has used salmon, broccoli and crème fraiche to make a delicious filling for her crêpe style pancakes. These remind me of the savoury pancakes (called galettes), I used to eat when I lived in France – if you’ve not tried a savoury pancakes you really need to – they are SO GOOD!!

Oven Baked Spaetzle with Turkey and Spinach

Keeping on the continental theme, I’m loving this Oven Baked Spaetzle with Turkey and Spinach: a German versions of macaroni cheese from Patrick at Looney for Food. In this recipe Patrick shows how to make German pasta – called spaetzle. He then combines the spaetzle with lean turkey mince and spinach. He also uses a chicken stock based sauce, rather than the traditional bechamel. The result is a much lighter version of macaroni cheese that’s packed full of goodness.

Beetroot and Black Cumin Soup

I’m a big fan of beetroot soup so this recipe for Beetroot and Black Cumin Soup by Janice at Farmer’s Girl Kitchen really caught my eye. This recipe is adapted from the cookbook Moro. And Janice originally made it as part of a challenge where she had to open a recipe book at a random page and make whatever she landed on! I love that idea – a great way to try new things and not get stuck in a rut. Whilst I’ve had beetroot soup many times, I’ve never thought to put cumin in it before – I really need to try that twist!

Cauliflower Rice Stuffed Peppers with Feta

The final recipe is for these fab Cauliflower Rice Stuffed Peppers with Feta from Monika at Everyday Healthy Recipes. The twist here is that she uses cauliflower rice instead of normal rice for the stuffing. I am a huge fan of stuffed peppers and cauliflower rice, but I’ve never thought to combine the two! Using cauliflower rice instead of normal rice makes this recipe low in calories and low in carbs. As Monika says, it would make a great vegetable side dish or starter. Though I really like the idea of serving this as a vegetarian main with a side of chunky homemade chips (obviously that wouldn’t be low-carb ?)
