Roasted Cabbage Steaks are the most delicious side dish!
If you're not too sure about cabbage, then you've got to give roasted cabbage"steaks" a try! Roasting the cabbage really brings out its delicious sweet flavor.
One sheet pan side dishes and meals are pretty awesome!
I love making side dishes that are so easy to put together giving you more time to focus on the main meal OR dessert.When you can throw everything on one sheet pan and call it good, that's a huge bonus.
Roasted cabbage steaks are a no-fuss, easy to make side dish.
They're really so simple to make. All you need is is a head of cabbage, some quality healthy fat like grass-fed butter, ghee or avocado oil and a little bit of fresh garlic and rosemary.
Slice the cabbage into thick "steaks" and put them on a greased sheet pan. Next up melt your favorite healthy fat and mix some chopped garlic and fresh rosemary into it. Then pour that deliciousness over the cabbage steaks and season them with some sea salt.
Pop them into the oven and let them do their thing. While they're roasting, make your chimichurri sauce. This beautiful green sauce is totally optional, but I highly recommend it. Chimichurri sauce is a favorite in my home, we love pouring this beautiful sauce over veggies.
To make the chimichurri, you'll need some cilantro, Italian parsley, rosemary, a little bit of lemon, some fresh garlic and some good quality organic extra virgin olive oil.
Everything goes into the blender, give it a quick mix and in seconds you'll have a beautiful, green chimichurri sauce.
When the cabbage steaks are done, generously drizzle the chimichurri over each perfectly portioned roasted cabbage steak.

Garlic Rosemary Roasted Cabbage Steaks

This one sheet pan Garlic Rosemary Roasted Cabbage Steaks side dish is so easy to make and bursting with flavor! It's easy on the budget and deeply flavored with herby aromatics and topped with a vibrant chimichurri sauce.
Ingredients
Cabbage:
- 1 head of cabbage
- 2-4 tablespoon grass-fed butter, ghee - melted, or avocado oil
- 2 fresh garlic cloves, finely chopped
- 2 teaspoon finely chopped fresh rosemary
- 1 teaspoon Celtic sea salt (<-- this is my favorite sea salt)
Chimichurri Sauce:
- ½ cup fresh cilantro {about 2 small handfuls}
- ¼ cup fresh Italian parsley {about 1 small handful}
- 1 teaspoon fresh rosemary leaves
- 1 fresh garlic clove, smashed
- Zest and juice of ½ lemon
- ¼ teaspoon Celtic sea salt (<-- this is my favorite sea salt)
- 2 tablespoon organic extra virgin olive oil
Instructions
- Preheat the oven to 400 degrees F. Grease abaking sheetor line withunbleached parchment paperand set aside.
- Slice the cabbage into ¼" to ½" thick rounds. Place the cabbage slices on greased baking sheet and set aside.
- In a small mixing bowl, add the melted fat of choice, chopped garlic and chopped rosemary and give it a quick stir. Evenly distribute the garlic-herb mixture over the top of each cabbage slice. Season each cabbage slice with sea salt. Place in the oven for 35 to 40 minutes or until the cabbage slices have softened and begin to have golden brown edges. Since all ovens vary, please check your cabbage "steaks" around 20 minutes to gauge how much longer they will need in your oven. You don't want the cabbage to burn or it becomes bitter so watch it carefully.
- While the cabbage "steaks" are roasting make the chimichurri sauce. Add all of chimichurri ingredients to a blender or food processor. Mix it for just a few seconds until everything comes together. It's okay to leave it a bit chunky if you prefer or blend until completely smooth. Set aside.
- When the roasted cabbage steaks are done, serve immediately and generously drizzle the chimichurri sauce over each cabbage steak.
