Now everyone loves the Hedgehog Slice, but there comes a time when you want to take something humble and add a little something extra to "take it to the next level" and when you combine my daughters favourite chocolate bar into this - I think you can understand what happened! GONE! GONE! GONE! Didn't even get a photograph ... so I just HAD to make it again one weekend when she wasn't home! Then I got to finally try some and WOW talk about humble being dressed up and ready to take to the next BBQ, kids party, bring a plate, playgroup, work function etc etc etc.

I am keen to actually try some different chocolate bar versions of this and perhaps I might need to look at publishing a Hedgehog Slice book! ;) It really is seriously delicious and you won't be disappointed - my only suggestion - MAKE SURE YOU SAVE YOURSELF SOME! :)

Hedgehog Honeycomb Slice - ThermoFun

Ingredients

  • 500g milk or dark chocolate, melts
  • 150g golden syrup
  • 40g coconut oil
  • 3 x 50g Violet Crumbles, cut into chunks with a knife
  • 200g Scotch Finger biscuits, broken into ⅛ by hand
  • 170g almonds

Instructions

  1. Lightly grease a 18cm x 28cm rectangular slice tin. Line base and two long sides with baking paper, extending paper 2cm above tin edges.
  2. Place almonds into TM bowl and chop 3 sec / speed 5. Set aside in a large mixing bowl.
  3. Place chocolate into TM bowl and chop 10 sec / speed 9.
  4. Add syrup and coconut oil and melt 5 mins / 50°C / speed 1. Scrape down and continue melting 2 mins / 50°C / speed 1.
  5. While chocolate is melting, break biscuits and cut violet crumbles and place into the large bowl with the almonds.
  6. Add melted chocolate to large bowl.
    No need to wash TM bowl.
  7. With aid of TM spatula combine mixture until coated with chocolate.
  8. Spoon into tin. Smooth over lightly, leaving jagged, rough edges on surface. Refrigerate for a few hours until set.

To clean Thermomix bowl:

  1. Pour a glass of milk into TM bowl and mix 5 sec / speed 8.
  2. Heat milk 5 mins / 80°C / speed 4.
  3. Enjoy warm chocolate milk. No wasted chocolate!

    hi there. I tried making this (twice) but the chocolate mix is extremely hard \, not melted at all and seems to have seized in the thermomix. Should the chocolate be melted first and then the coconut oil and golden syrup added? Is it possible that steps 4 & 5 are the wrong way around or am I doing something wrong?
    Any help would be great.

      Hi Jill, oh no! :( The steps are in the right order and all I can think of is that your bowl may have not been completely dry before using. It is imperative than when using chocolate to melt, that there is not even a drop of water in sight as it will seize unfortunately. I do hope your mixture didn't go to waste.

        Thanks for the reply. I decided to retry the chocolate mix again but this time I melted the chocolate first and once melted added the coconut oil and golden syrup and it worked perfectly. It's in the fridge setting and I can't wait to try it tomorrow when I cut it. I'm sure it's going to be delicious.

      Hi Sharon, I'm not sure if you can eat other kinds of nuts but I'd say any kind of nuts would be lovely.

    Hi this looks like my kind of thing! What can i use to sub violet crumbles as i haven't come across them in Bristol, UK ?

      oh no Androulla how sad! Violet Crumbles are one of my most favourite choc bars!! Do you have "Crunchies" in the UK? Basically you are after a choc bar with honeycomb. I will ask in our ThermoFunkies Facebook group now and tag you to see if anyone knows what you can sub with in the UK. :)
